The email associated with my account is no longer valid. I'm unable to change the account email since verification requires response to an email sent to the invalid (i.e. non-functioning) address. Any workarounds?
I'm still able to access my vault. I'd prefer, however, to associate the account with a valid email address.

It is not possible to change your email address unless you have access to your current email.
One possible workaround is to open a new LastPass account with your updated email address and export everything from your current account to your new account.
