The display resolution is a per user setting in Windows/Mac (so on the host) and in the client, too. When the client starts the Remote Control session it sends its previously stored resolution settings (if any) and the host adjusts the display accordingly.
We could add a configuration setting to the host, with which the resolution change could be disabled on the host, during Remote Control session. Would this solution satisfy your needs?
