I just tested a freshly scheduled, recorded webinar and was able to update the reply-to email listed on the confirmation email. Can you try updating your reply-to address for that webinar again and then register for it as a test?
@AshC seemed to work in the 'On Demand' option for 'Simulated Live'
However, the other thing that I found out is that the information button that users can click on during the webinar (the one that shows the title and description, also has the email that is linked to the account, it displays the organizer's name and email.
Is there another place where that email address can be changed without having to change the account email? or, Can the organizer's information be removed from this part?

There will still be some visibility of your name and Organizer email address, as the reply-to email setting only applies when registrants click the automatic 'reply-to' option in their own email application.
