Depending on how different they need to be set up, each Service has its own configuration where you can set Default Selections, associate one Company with each Service, etc. What are you hoping to make different about each one? Different Customers? Different User Assignees? Different SLA's? To begin, you can click on Configure >> Services and hover over Incidents tab. Here, you will be able to see the selections that can be different for each Service.
