I haven't seen this previously but checked with a colleague and it has been reported previously, though not necessarily with just MacBook Pro. We are going to share this with the product team. Thank you for taking the time to report this.
The ability to change the recording thumbnail is not currently available. You may want to create a Community Idea, where others can vote and comment on the feature. This allows others to vote and comment on the feature, which helps our team prioritize feature improvements.
