Is this possible? It appears that I can disable it within the LogMeIn Control Panel by unchecking File System (?)
on each computer but I'd rather do this remotely for all users from the Admin panel.

Central does not disable the file sharing option, but you can change the size of the file that can be shared via Host Preferences.
Can you share a screen shot of the control panel? In the host control panel, you can't block file sharing or management, but you can choose to use a Simplified File Manager session, under Preferences.
